Hi, I need some new ideas for my fussy boy with ASD who is soon to start full time school. Last year at kinder he would only eat crunchy foods in his lunch box: dry breakfast cereal, crackers, breadsticks, biscuits etc. Sandwiches and other soft/moist things are a waste of time. Before you suggest wondrous healthy things like raw carrot sticks and anyting salad-y I should mention the total vegetable phobia, other than potato chips. If he manages to eat some apple that's the total of fruit and veg consumption other than fruit juice. Fortunately dairy is no problem for him, and he also loves meat. He also eats homemade biscuits and I experiment with different flour, nuts and seeds, with varying success. One of the problems with his sensory issues is he can't stand flaky, uneven or unpredictable textures, so muesli bars are out, as are bits of dried fruit and anything coconutty. Things need to be uniform and predictable and any "bits" microscopically small and invisible.
Also I may not pack anything containing nuts in school lunches due to school allergy policies. I am also expecting a baby a month after school starts so I need some good ideas NOW of what to put in that lunchbox : preferably easy to prepare, preferably healthy and nutritious, even better if I can prepare in advance or freeze. HELP!
