Easy & Cheap Dinners for Bub

2 Potatoes
1/2 Carot
Some Broccoli
Some Cauliflour
1/2 Zuccini
1/2 Chicken Breast
4 Slices Beef

Cut up veges. Place veges in steamer. Brown beef in frypan. Get two small bowls. Place half of each vegetable in each bowl. Place Chicken in one bowl and beef in the other. Put one bowl into the blender and mix. Do the same with the other bowl. Portion into ice trays and place into freezer. When frozen take out of tray and place in another container in freezer.

When its time for dinner, just microwave the amount needed for you bub. I feed my son Riley chicken for lunch and beef for dinner or visa versa. He loves them and its so easy. It lasts Riley usually a week and makes dinner time a whole lot easier as I only need to cook my husbands and my dinner. You can change the veges aswell. eg. swap your potato for sweet potato.

creamed corn rolls

place cooked bacon pieces,creamed corn and cheese in a bowl(as much as you like) stir.
cut all the crusts off a loaf of bread and butter one side put the fillings on the no buttered side and fold in half put on a tray and in the oven till brown.

you have to try it they are so yummy we use to cook them for the kids in daycare

APRICOT CHICKEN

500g chicken thigh fillets, chopped and skin removed
125g Sliced Mushrooms
1 onion sliced thinly
45g packet of chicken noodle soup
420g canned apricots in their own juice
green beans or snow peas are great

Pre-heat oven to 180 oC
Place chicken, mushrooms, onion, chicken soup mix and apricots in a large casserole dish.
Cover and bake for for about 45mins or until the chicken is tender to touch.
Stir in the beans or snow peas. Bake for a further 5 mins and then serve.
Serving suggestions- rice, mashed potato, or with crusty bread.
My son loves it and I hope your kids will to, enjoy!!!

MAMA'S BAKED CHOPS

This is a favourite recipe from our Grandmother that has gone 4 generations as I now mash/puree it up for my 8 month old.
It is a really delicious cheap meal.

6 forequarter chops
1 large sliced onion
2 large sliced tomatoes
2 carrots roughly chopped
4 potatoes chopped in halves or quarters
140g tub tomato paste
Dried mixed herbs

Preheat oven to 180 degrees C.
Get a large baking tray, place chops in tray, cover with onion, then tomato, then carrots with potatoes on top.
Mix tomato paste with two cups of water and pour over. Place in oven and check occasionally. When potatoes are golden brown on top cover baking tray with foil and turn oven down to 160 degrees.
Bake for at least 2 hours- the chops will be so tender they will fall apart. 10 minutes before serving take foil off and sprinkle herbs along the top.
Ideal with fresh steamed green beans and asparagus.
To make gravy to go with this meal put the chops etc in a casserole dish. Then put the baking tray over the stove on a low heat with the juices in it and add flour and water that has been mixed together in a cup. Makes a yummy gravy.

Quick and Easy Cheesymite scrolls

These are super easy and great as snacks, lunch, or even pop them into your childs lunch box.

2 peices of puff pastry
2 table spoons of vegemite
3 table spoons of grated cheese
1 egg white


spread both lots of pastry with vegemite leaving a 1 cm gap on all edges, top with cheese, brush edges with egg white and roll up, slice each roll into 6 peices. arrange on a lined and greased baking tray and bake for 10-15 minutes at 180 or until they are golden.
store covered in fridge for upto 4 days.
makes 12.

*Try making them for dessert!!! Replace vegemite and cheese with 1 grated apple and half a box of saltanas, cook the same then top with icing sugar, serve with custard yummo!!

could it get any easier?? only takes a few minutes to prepare.

* try other combinations, others my son loves are: chicken cheese and mayo, ham cheese and pineapple.

Cheesy SailBoats

1 medium zucchini
1 medium carrot
1 cup of flour
1 medium onion
3 eggs
1/4 cup of olive oil
1/2 cup of milk
Carrot sticks
Whole basil leaves


1. Lightly grease a muffin tin
2. Grate the cheese zucchini, onion and carrot and combine with the flour eggs, oil and milk.
3. Spoon evenly into muffin tray and bake util golden brown (about 20 minutes).
4. When cooked allow to cool.
5. Pierce a small hole in the basil leaf and attch to carrot stick to make a sail.
6. push the carrot stick into the muffin.

Enjoy!!!

mini cornish pasties

I don't have exact quantities of ingredients as I tend to make it up depending on what I've got in the fridge & whats growing in the garden so use your imagination.

Add a little oil to a pan & brown some mince. When brown stir in some assorted vegetables ( small diced pieces ), the last time I made mine I had peas ,spinach & baby squash from the garden & some potato & carrot in the fridge. Let veggies soften slightly. Season (salt, pepper or a little tomato sauce ) depending on personal taste & age of children. Use frozen sheets of shortcrust pastry (thawed) & cut small circles out using a glass. Put a teaspoon of mixture in the middle, fold over & crimp edges with a fork to seal. Brush with beaten egg.Cook on a baking tray lined with baking paper until golden brown (at 180 degrees) this will take 10 to 20 minutes depending on your oven & the size of your pasties. This may seem obvious but do be careful to check that the filling has cooled enough before you give them to littlies, they do tend to stay hot in the middle for a while.

Sophie's Favourite Tuna Mornay

1 Tbsp butter or marg
Plain flour
Formula
Mixed herbs
Tuna in springwater
1 cup cooked Risoni or other small pasta shapes.

Cook pasta according to instructions set aside to cool.

Melt butter in pan, add enough flour to make a thick paste, add enough formula ( or milk if your baby is old enough) to make a white sauce, about 200mls, stir over low heat until thickens.

Stir in herbs, Tuna & pasta.

Is great to freeze & can be made with any boneless fish.

My little girl loves this she is now 13 months and still woofs it down.

Beef & Vegetable Cous Cous


Brown some mince
Add cut up pumpkin & potato add to meat and cook together a few mins. Then add water to pan enough to just cover veges add teaspon on low salt stock poder or use stock instead of plain water.
When veges are soft place 1/4 cup cou cous to mix while still warm this will puff cous cous up.

serve at desired consitancy for bub. This is suitable from 6 months.
Hope your bubs enjoy it as much as mine does
