Recipe of the Month - January 2007 Rss

Hi Everyone

I can't believe we're launching our first Recipe Competition already. The winning entry will appear on the Huggies website in our <a href=" http://huggies.com.au/BeingAParent/FeedingYourBaby/default.asp">Feeding Your Baby</a> section in January.

Let's kick off the year with a bang and whip up some delicious creations for our families whether babies or toddlers.

Roasted Pumpkin & vegetable raviolli

-one packet of fresh wonton wrappers
-100g Jap pumpkin, cubed and lightly roasted
-100g mixed green vegis, the ones your toddler wont eat! cubed and steamed
-1 egg
-1 teaspoon of vegi stock
-pasta sauce of your choice

Place the vegis and roasted pumpking, egg and vegi stock in the food processor, blend to a paste. It should be thick, one tablespoon of rice flour can be added to thicken it. (1/2 a cup of cheese can also be added if you like)

Taste the paste to check flavor. The roasted pumpking should make it nice and sweet.

lay out half the wonton wrappers, place a teaspoon of the mix in the centre of each wrapper. brush a LITTLE water around each wrapper with the paste. With the remaining wrappers, work one at a time, layer it over the top, removing all the air pockets. place them on a tray (try and keep them seperate)

Boil in lightly salted water, until them float. no longer than a few minutes. drain, and then mix with sauce.


I make this recipe with homemade pasta as well, I get my 3 year old to help. She loves to cook! This way I can get vegis into her!

My recipe is:

Mince Pie with Ricotta Cheese topping.

2T olive oil
1 brown onion, chopped
2 garlic gloves, chopped
1 celery stalk, chopped
2 carrots, peeled and chopped
750g beef mince
400g can chopped tomatoes
2T worchestershire sauce
salt and pepper
500g carton smooth ricotta cheese
2 eggs
1t dried oregano leaves
1/2 cup grated mozzarella cheese

Part 1:
Heat a large saucepan over high heat. Cook the oil, onion and garlic for 1 minute. Add the carrot and celery and cook for 3-4 minutes. Add the mince, breaking up lumps, and cook for 8-10 minutes or until the mince is browned. Add the tomatoes, worchestershire sauce, salt and pepper, and simmer for 15 minutes or until the mixture is thickened.

Part 2:
Heat oven to 220 deg C. Place the mince mixture in an oven casserole. In a bowl mix the ricotta, eggs, oregano and mozzarella, then spread this mixture on top of the mince. Bake for approx. 20 minutes or until cheese is golden. (Serves 4)

My 15 month old loves this moulied up a bit. It is also great as you can prepare part 1 with some extra water in it in the afternoon to simmer until dinnertime, then all you have to do is part 2 and thow it in the oven. Its a very easy recipe!

My recipe is BUBBA'S HI IRON BIKKIES

1 CUP OF Infant cereal - I use Heinz whole- meal banana
1 CUP OF Plain flour
1 CUP OF Heinz baby Juice.
(extra flour may be needed)

METHOD
Sift flour, and add the cereal, stir together.
Add juice slowly to make a dough ( best to use hand). Knead the dough onto a floured chopping board and roll out until about 6mm thick. Grease tray.
Cut into shapes suitable for babies. And BAKE at 180 degrees until light brown, let set and serve cold.

These are HARD BISCUITS and are made for teething babies, it encourages chewing.

Home made rusks

Cut the crusts off a slice of bread
Smear with vegemite
Roll into a tight sausage
Zap in microwave for 20 secs, roll again to make sure that it will stay in a log shape
Bake in the oven until crispy
Give to baby to enjoy

Make a few at a time and store in an airtight container.
