Recipe of the Month - September 07 Rss

We are launching a new Recipe of the Month feature in the next few weeks that will be located in another area of the website.

In the mean time please continue to post your entries into this month's recipe of the month competition here. Remember this should be a creation all of your own or a family favourite handed down through the generations, but it should definitely not be from a recipe book.

This is an old recipe from my Mother In Law - it is so easy and also delicious. I make it all the time (and my husband even says my version is better than his mums)!

Savoury Sausages:

Preheat Oven to 180 deg C.

In a large heavy casserole dish place:
10-12 good pork or beef sausages
2 finely chopped onions
2 carrots grated.

In a large jug mix together:
1/2 c brown or cider vinegar
2 c water
1/2 c brown sugar
2-3 T flour
4 T tomato sauce
Salt and Pepper to taste
1 T English mustard
Optional - 1 T curry powder (or to taste)

Pour this over the sausages and vegies, cover and bake in oven until the sausages are cooked (1-2 hours, test with a skewer) (I think the longer this recipe cooks the better it tastes!).

Serve with mash and greens.

Hot Dogs for kids

Buy a packet of "bake at home" rolls from the supermarket and some cheerios. I cook the cheerios first so they're hot all the way thru. Slice the rolls (like normal hotdog rolls) spread with whatever sauce you like, i add cooked diced bacon too then the cheerio then sprinkle with cheese and bake.

My mum always cooked this recipe for me and now I cook it for my kids and they just love it!! You can use any vegies you wish-these are just what I like to use.


Pasta & Vegie bake

Ingredients
Peas, corn, brocolli, cauliflower, zuccini
bacon
1 cup tomato sauce
1 pkt spirals
2 cups grated cheese
1/4 cup breadcrumbs


Boil vegies and spirals in seperate saucepans until cooked, then strain. Meanwhile cook bacon in frying pan until nearly cooked, then add tomato sauce and vegies and mix through. Put spirals in oven safe dish and pour bacon and vegie mixture over the top. Sprinkle with breadcrumbs grated cheese. Put in oven on 160 degree until cheese melts.

Hi,

I make these for the kids when i have left over peas, corn carrots and chicken pieces. Best of all you can freeze them and can alter the ingredients to suit what you have in the cupboard.

Chicken (cooked or raw)
peas
corn
grated carrot
Breadcrumbs
egg
salt and pepper
Parsley and oregano (optional)
filo pastry

Mince chicken in food processor, add grated carrot breadcrumbs and egg, mix well. Remove from processor and mix through corn kernals, peas and any other vegies you wish. Season to your own taste. ( I add seasoned breadcrumbs so often i dont need any salt)

Egg wash pastry sheets along the edges and place chicken mixture onto like a long sausage. Roll up the mixture in the pastry and brush the top with extra egg. Bake in 180 degree oven for 20 - 30 minutes according to your oven. Less time if you cut them into bite sized pieces.

The kids love them and so does DH. Try sweet chilli sauce as a dip for the adults and you can't go past the Big Red for the kids.

Keep in freezer for up to a month.

My 18-month old loves this berry creation, I often give it to him to have as a snack between meals, but it works as well for breakfast or as a dessert. He's been having it since he was about 7 months old and cannot get enough. The below is a simplified/variation of a berry porridge that my grandmother used to make. It is easy to prepare and can be made of a variety of ingredients, what ever you happen to have in the cupboards.

4 apples (or pears or a mix of both)
about 125g berries (fresh or frozen)
about 250 ml water
about 3 table spoons of semolina (or polenta or oatmeal)
Peel and cut apples and place in a medium saucepan along with berries and water. Bring to boil and let simmer under a lid for about 25minutes, until all ingredients are soft.
Use a potato masher to crush chunky bits (or use a blender/mixer to make smoother for smaller babies). Add semolina to the apple and berry sauce and bring back to boil, let cook for a couple of minutes, add more water if appears to be too thick. Pour into little jars or containers for light meals for your toddler. Can be served cold or warm.

Sticky Risotto- Mum's Style

1/4 diced green capscicum
2-3 diced mushrooms
1 diced carrot
1/4 diced onion
1 diced stick of celery
2 tbspoons beef mince
1/4 cup arborio rice
(I sometimes use the normal rice instead, its not sticky on being cooked then, but tastes great)
few leaves of parsley
1 tablespoon Cheese (any cheese that melts)

Stir fry the chopped vegies for about 1 minutes. Add mince and stir fry for another minute. Then add a little water and put it all in a blender. Add parsley leaves and blend it into a paste.
Bring it back to the pan. Add 1 cup water. Bring to boil. Add rice. Reduce the heat to simmer. When the water is reduced, add 1/2 cup more hot water. Keep doing this till you r happy with how soft the rice are. Stir in some cheese. Add a little bit of salt if u like.

The more water you reduce, the more sticky it will be. But my experience says that kids like in-between texture- neither too runny, nor too sticky. I like this recipe coz kids can't see the vegies but they can enjoy their falvour.

My bub loves this for breaky!!

Grated apple or pear
Hot boiled water
Baby cereal.

Put the grated fruit and hot boiled water in the microwave. Cook for half a minute. Take it out and add baby cereal.
If the baby is old enough to have chunky food, then just chop the fruit instead of grating.
Microwaving softens the fruit. Apples could be a little hard for babies to eat otherwise.
let it cool before serving. No need to add sugar as the fruit sweetens the whole thing.
To make it really attractive, make a smiley with sultanas on top.
