We're creating quite a nice little cookbook here on Parents Exchange that Mums and Dads can use as a fantastic resource when preparing meals and snacks for their children. Why have breakfast at McDonalds when you can enjoy breakfast at home with the family? Here's a quick and easy recipe that makes potatos interesting and yummy for both children and adults.

HASH BROWNS

2 large potatoes, halved
Oil, for shallow-frying

Add the potato to a pan of boiling water. Return to the boil, then boil for 10 minutes, or until the potato is just tender when pierced with a knife. Drain the potatoes, and leave until cool enough to handle. Grate the potato and place in a bowl. Season with salt and pepper, and mix through. Shape the grated potato roughly into patties about 10cm round. The starchiness of the potato will hold the patties together. Pour enough oil into a frying pan to cover the base. Heat up the oil and cook the patties over medium heat for 2 – 3 minutes on each side, or until golden and crispy. Drain on paper towel.

To add a tasty twist to the Hash Brown try adding grated cheese to the potoato mix before frying.

Luckiest Mum In The World

When in a hurry for dinner with a starving children, a quick and easy macaroni and cheese never fails in our house.

1 cup Macaroni pasta
1 pkt Continental Cheese sauce

Boil the pasta, and add the cheese sauce made to the directions on the packet, grate a little cheesse on top if you like the extra cheesy flavour.

We double the mix, add a little bit of cooked bacon & onion, or left over chicken or other meat, & it feeds our family of 6.

Cheap & easy!!

Can't get the kids to eat broccoli, put it in this family favourite and it should do the trick.

Bacon and Broccoli Quiche

250gm cottage cheese*
250gm sour cream*
5 large lightly beaten eggs
4-5 rashers bacon, sliced and cooked
1 zucchini grated, excess water squeezed out
2-3 cups steamed broccoli
1 cooked onion or 1/2 cup sliced shallots
1/3 cup self raising flour
1/2 cup grated tasty cheese*
parmesan cheese to sprinkle over top
sliced tomato for the top
pepper to taste

1. Pre-heat oven to 180 degrees, spray a quiche dish with olive oil spray.
2.Cut up bacon and onion and cook in frypan or in microwave for 4-5 min. Cut up broccoli and steam in microwave for 2-3 min. Squeeze out excess water and chop roughly.
3.Combine all ingredients in a large bowl and mix well
4. Pour into prepared pan, top with sliced tomato and parmesan cheese and cook for approx 50 min or until golden brown.

*You can substitute low fat sour cream, cottage cheese and tasty cheese for a lower fat option.

This is delicious cold the next day, cut up in fingers for toddlers or in lunchbox's for older kids. Hope you enjoy it as much as we do!!!

Dr.Seuss is a fav in our house & of course Green Eggs & Ham!!!

Their fav breaky is:

Poached eggs that I add green food colouring to after cracking it blends well.
With bacon.....

Try any colour we have had red & blue ones.

Also my 5 yo fav is scrambled eggs done in the microwave.
3 eggs
milk
grated parmessan cheese
salt & pepper to taste.
Microwave for 3mins stir then cook for a further 3mins ( depending on microwave use own discretion)
Have also added food colouring to this for the 4 yo.

My very fussy two year old just loves this recipe for Porcupine Meatballs (and so do I!). When I am having trouble getting vegies into him, I also add 1 grated potato and 1 grated carrot to the mix.

500 grams Mince Steak
1/2 cup uncooked rice
1 small onion grated (optional)
1/4 cup evaporated milk
1 teaspoon salt
1 can tomato soup
1 cup water

Mix meat, rice, onion, evaporated milk and salt. Shape into small balls. Heat soup and water to boil, gently drop in meat balls. Cover and simmer for 30 minutes. Stir a few times to stop them sticking.

Easy Zucchini Slice.

2 grated zucchini's
1/2 cup pastry mix
8 eggs
1 cup milk
1 cup cheese, grated

Beat the eggs, then stir them into the milk and pastry mix. Add in the zucchini and cheese and pour into a casserole dish. Bake at 180 degrees for 1 hour or until the egg is cooked.

This is a great receipe and can also have other vegetables added to it too. My son, Ethan, loves it!

This recipe is quick and easy and my 2 year old loves it. It is something different to do with sausages too.

Sausage Stew1

Ingreients:

4/5 Sausages
1 Onion( diced)
4/5 rashes Bacon (diced)
2 Potatos(cut into cubes)
1 Carrot

3 tblsTomato Sauce
1 tbldGarlic
2 cups Water

Cut the sausages into quarters (it is easier to do while frozen)
Cook suasages, bacon & onion in a frypan. Add water and garlic and tomato sauce potatos and carrot. cook until the potatos are tender.

very yunmmy served with rice or pasta too.

this will probably serve 4 people

I have just found out my little boy has cyliac disease, so finding recipes to suit, that are not bland and boring, has been very difficult. I just found this recipe however which is nutritious, easy and he loves it. The handy thing is most will find they have these ingrediants on hand:

Beef and Vegetable Hotpot

500g beef diced
1 medium brown onion, diced
1 medium zucchini, diced
1 medium red capsicum, diced
1/2 cup diced sweet potato
1 chopped celery stick
125g sliced button mushrooms
400g can diced tomatoes
420g can baked beans

Heat 1 tablespoon oil in large pan, brown beef and remove from pan. Add onion, cook until soft. Add zucchini, capsicum, sweet potato and celery, cook, stirring, 1 minute. Return beef and any juices to pan with mushrooms, undrained tomatoes and baked beans. Bring to boil, simmer covered, about 10 minutes or until veges are tender. Serve with mashed potato. VOILA!!

Creamy Mushroom & Tuna Bake

This is a quick and easy recipe, great for getting kids to eat vegetables.

Ingredients:
-375g pasta shapes
-2 sachets Heinz steam fresh vegetables
-410g can cream of mushroom soup
-6 spring onions
-425g can tuna (drained)
-3/4cup evaporated milk
-1/3cup grated cheese
-2 tbsp breadcrumbs
-2tbsp chopped parsley

Method:
-Cook pasta in water then add vegetables and cook a further minute.
-Drain and add back to pan
-Add soup, spring onions, tuna and milk
-Stir to combine, spoon into a large baking dish and top with cheese, breadcrumbs and parsley
-Bake at 200deg C for 20 - 25 mins.

Hi all. Here is a recipe that I use all the time for my little boy(and husband!). They are the easiest and quickest snack I make. I make them in mini muffin pans which are the perfect size for little hands. Adults love them too!! I know that my son is getting some dairy with this recipe. Hope you like it.

Cheese Puffs

1 cup Self-Raising Flour
1 cup grated cheese
1 cup milk
1/4 - 1/2 cup chopped ham(you can add anything actually, I sometimes add grated/chopped vegetables)

Mix all ingredients in a bowl until well combined. Spoon into greased muffin or mini muffin tins and bake at 180oC for 10 -15 minutes until firm in the centre. Allow to cool and enjoy.
