Thai Green Chicken Curry

12 boned chicken thighs chopped into medium sized chunks
1pkt of green thai curry paste
1-2 cans of coconut cream (add 1hr before cooking end)
2 carrots chopped chunky
100 gm snow peas, chopped in hal****2 small red capsicums sliced
50gm mushrooms chopped
1 cup of broccoli or broccolini florets
1/2 zucchini sliced thickly
Parsley and corriander (freshly chopped) to taste
1/4 cup water

chuck all in slow cooker, and mix to distribute green curry paste, cook on low for 3-4hrs, then mix coconut cream in (both tins if you like a very mild curry, one tin if you like slightly hotter).

Serve with Jasmine rice, or 20mins before serving, mix in 200gm of hokkein noodles. Yummo.

SALSA CHICKEN

1 jar of salsa to around 500-600g of chicken thigh fillets

Put it all in your cooker and cook on low for 5ish hours.


STEW

Chicken or Bee****Onion
Potato
Pumpkin
Carrot
Sweet Potato
Swede
Celery

Enough to fill your slow cooker.
Chop onion and meat but leave it fairly big as it falls apart it is so tender when cooked. Brown meat (season it to if you like I use season all) and onion, scrap all the yummy stuff off the pan and add it all to the cooker. Chop vegies into chunks and add to cooker.

2 packets of soup mix (spring veg, hearty beef, thick veg, chicken noodle... I always use 2 different ones.)

Dissolve soup mixes in a little warm water and pour over meat and vegies. Add enough water to JUST cover everything.

Cook on low for 12+ hours. I usually make it up the night before and put it in the fridge ready for the morning, that way i'm not chopping vegies at 6am! Or cook on high for 4+ hours.

Roast Beef & Gravy

Roast Beef (any cut/size etc)
Packet of French Onion Soup Mix
2 tablespoons of gravy powder
2 teaspoons beef stock (I leave this out - the gravy powder is enough really)
1 cup water


Place Roast Beef in slow cooker (health nuts can trim off any fat if they desire).

Sprinkle French Onion Soup mix, gravy powder & stock over it. Top with 1 cup water.

Leave on low all day, or I've done it in about 3-4hrs on high without a prob also.

Once cooked, take the meat out and thicken gravy as desired. I find the leftover gravy freezes really well and can be used as a sauce in mince etc.

[item]Place peanuts in 5 litre slow cooker sprayed with vegetable cooking spray. In layers, add chocolate chips, dark chocolate, white chocolate and milk chocolate. Spunky's Mums Pea & Ham soup

You will need;
*1 packet of yellow or green dried split peas 500gram
(If making a large pot of soup i use 1kg)

*Ham bones or bacon bones, or you can use smoked ham hocks from the deli. (i tend to buy a big ham on the bone, and make up lots of things like quiches, dh sandwiches for work and use some of the extra meat to add to my soup)

*Couple of carrots grated.
*2 large diced onions.
you can also add celery too!

Soak the dried peas the day before you are going to use them as this will soften them up and help with the cooking process. (mind you they STINK!)

The day of making the soup put the bacon bones or hocks into a large pot cover with water leave about 3 inches from the top bring this to the boil and turn down to a gentle simmer after about 1 hour. (I actually did this part on the stove top!)

Take bone out, and take off all the extra meat you can, leaving bone bare.

Then transfer it all to the slow cooker,use the water from the ham, add the strained split peas and add carrots and onions,and any extra ham/bacon you would like to add.

cook for a further 1 hour, on a high heat, or 2 to 3 hours on a low heat.

Taste to see how much salt you may need this depends on your taste as the bacon bones and hocks can be salty. Most times it wont need to be added.

The soup will keep in the freezer for about 6 to 8 months and will keep in the fridge covered for about 4 days.

At the end, i find it is a little too chunky for my liking, so i get my hand held blender and stick it in the pot to blend 3/4s of it. It takes 30 seconds, but makes the difference!

3 Little Ones to Love.....

Corned Silverside

You will need;

*Silverside
*Big splash of vinegar (Brown or white)
*1/4 cup brown sugar
*garlic (fresh is better!)
*cloves if you like
*Onion slithered


throw it all in slow cooker, then 3/4 fill with water, (corned silverside to only be half to 3/4 covered!)

I turn the silverside about half way through the day.

Easy Peasy Japanesy!


Serve with mash potato, cauli, cabbage and beans! DH likes white sauce, but i like it with mint sauce! mmmm

3 Little Ones to Love.....

i dont know what to call it - Potato... Stuff?? its basically potato bake done in a slow cooker, without the cheese on top.
i'm really bad, and never measure ingredients, so sorry, only rough quantities here!! do more or less, as you please.

7 potatoes
5 rashers bacon
1 onion
2 cloves garlic or minced garlic equivalent
1 cup mozzarella cheese (i guess any cheese would be fine)
600ml cream
some milk

chop onion and brown, add chopped bacon, and crushed garlic to pan, cook until bacon is ready.
cut potatoes into chunks, not too small. throw everything into the slow cooker, pour in cream, add milk so that milk and cream covers the potatoes.
cook until potatoes are soft
right at the end, add the cheese and stir through
season with pepper and nutmeg

sorry again if quantaties are out! i always guesstimate!



the potato bake sounds great
how long do you leave it on for? and do you stir it at all?
i'm a newy to slow cookers, but loving it!

Tomato Meatballs

Ingredients ( depending on family size)

500g Beef Mince
1 Large onion chopped
1 packet chicken noodle soup
breadcrumbs (a cup or more)
1 egg
2 cans of tomato soup ( i use the big red)

Method

Pour tomato soup in slow cooker

Place onion, chicken noodle soup and beef into mixing bowl and mix it all together with your hands, Then add the egg and continue to mix it together, Tip your cup of bread crumbs in and mix it together, Then put some more bread crumbs on a separate plate and roll your meatballs then roll them into balls ( size is your choice i do medium) then place them in the slow cooker. Put lid on turn on low for 7-8 hours.

Sever with either pasta or rice ( i prefer rice)

They are delicious!!!

Creamy veggie Casserole

4 diced potatoes
1 diced Zucchini
2 diced Roma Tomatoes
8 choped mushrooms
1 large diced onion
3 minced clove of Garlic
2 teaspoons Vegeta veggie stock
1 teaspoon onion salt
1 tablespoon paprika
1/2 tub of Philidelphia Cheese
1 pot sour cream
handful of grated cheese - your favourite sort

Fry up onions and garlic

throw all ingredients except grated cheese into slow cooker and cook on low for about 6 hours. Just before you serve throw grated cheese on top, and pop lid back on till it is melted.

Seriously yummy!
