Banana Bread Rss

Hey all!

Last night i dreamt of toasted banana bread with lashings of butter and now it's all i can think about lol sooooo I'm after a recipe for banana bread or better yet banana & walnut bread but rather than picking a random recipe off the net i thought i'd ask you huggies mummas for something that's already tried and tested!

Hit me with your yummiest recipe! TIA smile

Here is the recipe I use. It's delish!! I substitute the walnuts for choc chips when I want something different smile

Ingredients

125 g butter, melted
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1½ cups plain flour
1 teaspoon baking soda
½ teaspoon salt
½ cup sour cream
½ cup walnuts, chopped (optional)
2 medium bananas, mashed

Method

Preheat oven to 175°C and grease a 22 cm x 12 cm loaf pan.
In a large bowl, stir together the melted butter and sugar. Add the eggs and vanilla. Mix well.
Combine the flour, baking soda and salt and stir into the butter mixture until smooth.
Fold in the sour cream, walnuts and bananas. Spread evenly into the prepared pan.
Bake for 60 minutes, or until a toothpick inserted into the centre of the loaf comes out clean. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely.

This is so nice- and so moist!! And the ingredients are pretty straight forward too- you shouldn't have to go to the shops <span class="emoticon wink">wink</span>





Mine is super easy.

2 mashed bananas
1 cup flour
3/4 cup caster sugar
Pinch of salt
One egg
Tbl spoon golden syrup

No particular order, just throw it all in a bowl and mix togethor. Will end up looking like a light yellow cake mix... With some lumps tongue

Pour into a greased loaf tin and pop into a pre heated oven at around 200c. Can take anywhere from 45min to an hour depending on your oven. Clean skewer and nice and golden on top.

Thanks Salm10! I don't have any sour cream atm but i'm definitely saving this recipe for a later date as it sounds really yummy!

Hi,
This one is a family favourite the kids love it too.

Date, Walnut and banana loaf

150g (1 cup) chopped dates
200g (1 cup) firmly packed brown sugar
250ml (1 cup) water
320g (2 cups) wholemeal self-raising flour (i just use normal S/R)
260g (1 cup) mashed ripe bananas
55g (1/2 cup) chopped walnuts
1/2 tsp bicarbonate of soda

Preheat oven to 180, brush 14 x 21cm loaf tin

Combine dates, sugar and water in saucepan over low heat, cook, stirring for 2 minutes or until sugar dissolves, increase heat and bring to the boil, take off the heat.
Add sifted flour & bicarb, banana, walnuts and stir until combined, spoon into tin
cook for 40 minutes
Well DD & I tried TallulahBelle's recipe the other day and it was delish! I thought i'd post a few pics of my little helper!

Oh and i've decided to make it my mission to try all the recipes posted...my stomach thanks you...my @rse however is not so happy!!! <span class="emoticon wink">wink</span>

haha yeah oops!! I think I was extra tired that day. Everything else is right though. Made this recipe today actually but in muffin form instead. They were very yummy!!
A good friend of mine adds chia seeds to her recipe too. Mmmmmmmmm banana bread.......
