How do you make good mash? Rss

I need to learn to make good creamy mash potato. Mine always has lumps that I can't get out. Help please!

using the right kind of potato does make a difference. I always play it safe and use the ones that are dirty - can't think of the name! haha But I cook the crap out of them to make sure they are VERY soft and then add heaps of butter (not marg wink salt, and pepper, and mash mash mash... then add a bit of milk until it's creamy.

I use Dutch Cream potatoes whenever I can. I just give them a wash, cut them so they're in rounds, pop them in a pot and boil them til tender. Drain for a few minutes to let them dry off a bit, and also let the pot dry out. Tip back into the pot. Use your masher and go for it for a while, don't add anything til it looks even and not lumpy. Add a generous chunk of butter and get to mashing again until it looks creamy, stir vigorously between mashing to make sure you get to it all! Add milk and keep mash/stirring it in until you have enough to make it the consistency you like.
For a bit of variety add some crushed garlic, or some finely (like super finely) chopped red onion.
When you shop have a look at the little pictures on the bags of potatos - they have a bit that says 'good for' and then pictures for either mash, roast or boil.

If you have lumps it's because you needed to cook them for longer.

If you want REALLY awesome mash, add butter, salt and cream. (bad bad bad!!)

Sometimes I add butter, salt, dash of milk and then some grated cheese - gives it a really awesome smooth texture and a nice taste.

Usually I just add butter, milk and salt on any given week night but. smile




I push mine through a sieve. Cook the potatoes and then squish through a fine sieve with the back of a spoon. Then add whatever you like to it. Yum.

Cook them for longer.
Add marg/butter then mash, then add the milk/cream and use a fork to whip it. Never fails for me.grin

I buy the red skinned spuds, boil them until they are soft, drain them then return them to the pot and back on the heat. I shake them around until they are dry then mash them with the masher. Then I add hot milk, butter, salt and pepper and beat the crap out of the mash with the electric beater. Perfect every time, yum! I really want to get a potato ricer though, apparently they make awesome mash.
