amazing orange cake recipe needed Rss

haha - my partner LOVES orange cake - more than anything else in the world wink and I have tried lots of orange cake recipes but I'm still on the hunt for one that takes the cake (pardon the pun)

Any mums or dads out there that have an awesome recipe?

Also - anyone know how they make that amazing icing that is on top of the Bakers Delight cinnamon logs? He's been nagging for me to figure that one out for ages! haha

This one is very easy and is a huge hit whenever I make it.

200g melted butter
1cup sugar
3eggs
1 1/2cups SR flour
1 whole orange vitamised

*mix together all ingredients then add orange
*cook in 180degree oven for 30 mins
*ice using a butter icing (I normally add a bit of orange juice and rind to flavour)



Here's my 3 Minute Orange Cake (so named cos it's so quick to make lol)
This cake is nice and moist and super easy to make but at the end of the day an orange cake is only as good as the oranges that go in it so make sure they're sweet & juicy.

200g navel oranges
175g butter
3 eggs
1 cup caster sugar
2 cups s.r.flour
1 cup icing mixture
2 tbs orange juice + zest

-Preheat oven to 180 & grease cake tin (i also line the base).
-Cut unpeeled orange/s into quarters, throw into food processer and process till finely chopped.
-Add butter, eggs, sugar & flour. Process till combined.
-Spread evenly into pan & cook for 40-45min or until cooked through (skewer check!). Stand for 5 mins before turning out onto rack.
-Once cooled, combine icing mixture with orange juice. Mix till smooth.
-Pour over cake, finely grated orange zest over top and allow to set.
-If you want to be really indulgent serve with a dollop of double cream...yummo!
