Milk, Egg and Peanut Free Choclate cake and muffin recipes Rss

Hi all,
These recipes came from the Allergy Awareness Ass., are milk, egg and peanut free, and I've made them myself - very good!

Chocolate Cake

1 1/2 cups of flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 Tbsp cocoa
3/4 cup sugar
1 Tbsp Malt Vinegar
5 Tbsp oil
1 cup luke warm water

Set oven temp to 180 degrees C
Sieve together flour, baking powder, baking soda, salt and cocoa into a mixing bowl.
Add sugar and mix to combine.
Combine malt vinegar, oil and water, add to dry ingredients.
Mix until combined.
Bake at 180 degrees C for 25-30 mins in a 20cm cake tin (greased).

Icing - Combine 1 cup of icing sugar and 2 Tbsp cocoa. Add 1/4 cup water slowly, stirring to make a paste. Ice when cold.

Milk, Egg and Peanut Free muffins (and soy free)

2 Cups plain flour
4tsp baking powder (yes 4tsp!)
1/2 cup sugar
75g milk-free margarine (I use Olivani)
1 cup of rice milk
1 tsp Orgran (egg substitute, from a health food shop)
1 Tbsp water
1 cup tinned fruit eg peaches, drained and chopped

Set Oven to 200 degrees celsius
Sift flour, baking powder into a large bowl. Add sugar.
Combine melted margarine, milk, orgran and water.
Add liquid ingredients to dry ingredients.
Mix gently until just combined.
Divide among 12 greased muffin pan
Bake for 10-12 mins
