JULY- Recipe of the Month Rss

Hi to all our members,

We've launched a new section on our website that you can be part of, "Your Recipe of the Month". It will feature in our "Feeding Your Baby" section on the website.

Your recipe should be "tried, tested and loved", perhaps you could include a hint or tip for freezing, or in fact how to get the little cherubs to eat the food you've so lovingly prepared.

To Enter, post your recipe here. You have until the end of June, then the Huggies Team will make their selection and if your recipe is chosen you will recieve a small gift from Huggies.

hey guyz as winter has just come i have a recipe for Shepherds Pie youll need.

1 x 120g can HEINZ Steak & Vegetables
1 teaspoon cooked peas, carrots and parsnip - mashed
1 tablespoon mashed potato
1 teapoon grated cheese

Method
Add cooked mashed vegetables to HEINZ Steak & Vegetables. Place in a small heat proof container. Spread mashed potato and sprinkle cheese on top.

Heat for a few minutes in the oven until the cheese melts and browns. Allow to cool. Spoon the required amount into baby's bowl.

Makes 1 serve.
if u like you can freeze this and heat for another night..

Hi guys
This is one of our faves and is a great way to get little people to eat some vegies!!
Zucchini Slice
375g zucchini, grated
1 onion, grated
1 carrot, grated
1 cup cheese, grated
4 bacon rashers,diced
1 cup SR flour
1/2 cup oil
5 eggs
salt & pepper

Mix all ingredients together, pour into oven proof dish and bake in moderate oven 30-40mins.

How easy is that!! Really good finger food for toddlers, my son just has it as is while hubby and I add a bit of salad.

Irish Stew


12 potatoes
6 large onions
1 carrot
2 ounces butter
A little parsley
Pepper and salt to taste

Cut up the potatoes in one-inch squares; scald, and cut up the onions, chop the carrot and parsley. Boil all together in a pint of water until the vegetables are cooked, but not pulped. Add the seasoning and butter fifteen minutes before serving.


AND



Cheese Biscuits


2 cups of flour
4 teaspoons of baking powder
2 tablespoons of butter
1/2 teaspoon salt
Grated cheese sufficient to give desired flavor
1 cup of milk

Mix all the ingredients, excepting the cheese, as for baking powder biscuits. Roll thin, divide into two parts, sprinkle one half with grated cheese, lay the other half of the dough over the cheese, cut with a small cutter, and bake. The oven should be hot enough to bake the biscuits quickly.

Hi mums,

Here's ann easy recipie for the whole family to warm your tummy this winter. The amounts are only a guide. If your anything like me i just cut up stuff & throw it in. No measuring here!!!!

Beef & Pasta Bake.

3 bacon rashers
350g mince
350g mushrooms
420g can tomato soup
1/4 cup tomato paste(optional)
300mls cream
150g pasta(any size or shape you like)
3/4 cup grated cheese

Cook pasta according to directions on pack.

1. Cook bacon. Add mince. Cook. Add mushrooms, soup & tom.paste - simmer.
2. Add cooked pasta & cream - mix well. Simmer a few minutes.
3. Spoon into casserole dish & top with grated cheese & bake in oven for about 10 mins, until cheese melted.

Enjoy!!!!!

I have a 3 year old & a 14 month old & they LOVE it. I have recently put my 14 month old onto soy products, no dairy at all, therefore I take a serving out for him before i add the cream.(Also no cheese on top) It hasn't made any difference to him, he still woofs it down.

Basic Baby Beef Stew
2-3 Baby serves
Suitable for freezing
Suitable for babies 6-9 months
Lunch or dinner
This forms the basis for a main meal. Many babies will happily eat variations of this most days.
1 small potato
1 small carrot
1 small piece pumpkin
3 broccoli or cauliflower florets
homemade beef stock or water, to cover
1 teaspoon tomato paste
1 small clove of garlic, crushed
100g minced lean beef
1 teaspoon chopped fresh parsley
grated cheese
Directions
1. Peel and cut the potato, carrot and pumpkin into chunks.
2. Place in a saucepan with the broccoli and cover with beef stock.
3. Stir in the tomato paste.
4. Lightly fry the minced beef and garlic in the oil in a non-stick frying pan, over a medium-high heat until the beef is just brown.
5. Add the beef and garlic to the saucepan.
6. Cover and simmer until the vegetable are tender. Add parsley.
7. Put through a mouli or blender.
8. Stir in the grated cheese while still hot.
Variations:
Any vegetable combinations can be used- try spinach, cabbage, zucchini, mushrooms, peas or green beans.
Try adding herbs and flavourings like basil, oregano or paprika.

Simple Chicken Risotto
Suitable for freezing
Suitable for babies 6-9 months
Family serve
Lunch or dinner
1 tablespoon vegetable oil
1 small onion, finely chopped
1 clove garlic, crushed
300g mince lean chicken
2 mushrooms, brushed and thinly sliced
1 large tomato, peeled, seeded and chopped
1 stick celery
1 tablespoon chopped fresh mint
1 tablespoon chopped fresh parsley
1 cup Arborio rice (Arborio is a plump short grain rice which is ideal for risotto)
3 cups homemade chicken stock
Directions
1. Heat the oil in a large heavy-based pan. Add the onion and garlic and cook for a few minutes, stirring over a medium heat.
2. Add the minced chicken and brown, stirring occasionally, for a few minutes.
3. Add mushrooms, tomato, celery, mint and parsley. Stir well and cook for 1 minute.
4. Stir in the rice then add the stock. Bring to the boil, then cover and simmer for about 30 minutes, stirring occasionally to prevent sticking, or until the liquid is absorbed and the rice tender. Add extra liquid if necessary.
5. Blend or mouli a portion for your baby.

Chicken Pasta Bake

2 cups uncooked spiral pasta
1 can creamy chicken & corn soup
1 1/2 cups chopped cooked chicken
1/2 avocado, chopped
1/2 cup corn kernels
1/4 cup grated cheese
1/4 cup breadcrumbs

Cook pasta, drain.
Heat oven to 180o.
While pasta is cooking, heat the soup.
Stir in chicken, avocado and corn kernels.
Once heated through stir in the pasta.
Transfer to an ovenproof dish, top with cheese and breadcrumbs.
Bake in oven until cheese is melted and slightly browned.

Lucy has recently been asserting her independence and wanting to feed herself. By chopping the chicken and avocado fairly chunky its an easy meal for her to feed herself.

She also thinks it's quite tasty with broccoli and/or carrot added.
With three children to feed (and one still on the breast!) I need quick, simple and nutritious finger foods for my littlies. These mini quiche are ideal for a snack or a meal with salad or steamed veges.

MINI QUICHE

Ingredients -
2 sheets puff pastry
1 onion chopped finely or processed
1-2 bacon rashers chopped finely
1/2 cup grated cheese
2 eggs
1/2 cup milk
seasoning to taste

Method -
PREHEAT oven to 220 degrees
CUT puff pastry into 6.5 cm circles (use scone cutter, cookie cutter or cup) and place in patty tins
DIVIDE onion, bacon and cheese evenly into pastry cases
COMBINE eggs and milk and pour equally over bacon, onion and cheese mix to cover
BAKE for 10-15 minutes until egg is cooked.

My family love these and they are great for when friends drop in. You could add small amounts of grated veges if you like instead of onion or bacon. Zucchini or carrot work well. Enjoy!

Here's one my 23m.o loves.

Fishy Fritters

2 packets instant noodles
1/2 cup SR flour
3 eggs
200g tin corn kernals
200g tin pink salmon/tuna
oil, for frying

1. Break up dried noodles into a large bowl. Pour boiling water over them to rehydrate.
2. Into another large bowl add flour, eggs, corn, salmon/tuna.
3. Add noodles and mix well. Using wet hands roll into balls.
4. Add a little oil to frying pan and add balls, pressing down to flatten slightly. Fry both sides until golden and cooked through.
5. Remove from pan and drain on paper towel.

LAMB SHANK SOUP
Boil 2 Lamb shanks for approx 1 Hour
Strip meat from bones and dice when cooled.
Skim fat from stock when cooled
To the stock add:-
1 can Tomatoe Soup
1 can diced or puree Tomatoes
2 Chicken Stock cubes crumbled
1 Tbls Worcestershire Sauce
1 diced carrot
2 celery sticks sliced
1/2 cup longrain rice
1 cup shell pasta or a variation lentils
Boil all ingredients together until tender.

Mum to 2 1/2 yr and 11 month old and both scoff this winter warmer along with Mummy & Daddy.

This recipe is suitable to freezer.
