Now your child won’t have to finish his vegetables before dessert!
When they were babies, they used to down pureed vegetables by the spoonful. Now that they are big girls and boys, they’ll scream if so much as a single pea touches their lips. If your child is refusing to eat her vegetables, this super silly vegan “dessert” dish just might do the trick.
Scoop a helping of mashed sweet potatoes in a plain ice-cream cone. Sprinkle the potatoes with cooked peas. Add a cherry tomato on top. Serve before the “ice cream” melts! For even more fun, serve your child a plain scoop of potatoes in a cone. Allow her to choose her own toppings by offering her several small bowls of ingredients such as peas, corn, carrot squares, and cherry tomatoes. Let her also pretend that the gravy is hot fudge.
