Michelle Bridges Lentil & Beetroot Salad

Ingredients

Serves 2

  • 440g(14.5oz) can whole baby beets, drained and halved
  • 400g(14oz) can lentils, drained, rinsed
  • 4 handfuls baby spinach
  • 1 shallot, thinly sliced
  • 1/4 cup fresh mint leaves
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 80g (2.6oz) reduced-fat ricotta

Instructions

1. Combine the baby beets, lentils, baby spinach, shallot and mint in a salad bowl.
2. Crumble over the ricotta.
3. Combine the oil and vinegar. Season the salad with pepper and drizzle over the dressing.

Mish Tips:
• Option: Take out the ricotta and olive oil and add 100g per person of grilled chicken breast.
• Feel free to replace the lentils with cannellini beans or chickpeas.
