Randang ayam

Ingredients

  • 300 g chicken breast, chopped
  • 1 cup coconut milk
  • ½ stalk lemongrass
  • 3 kaffir lime leaves
  • 1 turmeric leaf
  • ½ tbs salt + ½ tbs sugar
  • 3 tbs olive oil

Spices:

  • 3 fresh chilli + ½ red capsicum
  • ½ stalk lemongrass
  • 3cm fresh galangal
  • 2 cm fresh ginger
  • ½ onion + 3 pcs garlic
  • Blend all spices until a smooth paste.

Instructions

  1. Heat the saucepan with olive oil, add in blended spices paste, lemongrass, kaffir lime leaves and turmeric leaf, sauté until fragrant.
  2. Add in chicken breast, salt, sugar and coconut milk, stir to mix well and cook about 15-20 mins or until the spices sauce thicken.
  3. Serve in a bowl and garnish with shallots and fried onions.
  4. Rendang Ayam is now ready to serve with hot rice and fresh salad (cucumbers and tomatoes).
