Warming Winter Chicken Soup

Use up your leftover Sunday roast chicken with this hearty chicken soup recipe! It’s good for the soul (and the stomach.)

Chicken soup


  • Carcass of one chicken
  • 1 sprig of rosemary
  • 2 carrots
  • 1 onion
  • 3 celery stalks
  • 8 mushrooms
  • 1 tablespoon of garlic
  • 12 cups of water
  • Sprinkle of Tuscan seasoning
  • Left over gravy from roast
  • Cornflour to thicken
  • Salt and pepper to taste


  1. Chop the veggies, throw everything except the cornflour in the slow cooker and cook for 8 hours.
  2. After 8 hours, remove the lid and remove the bones (you may have to fish through to do this!)
  3. Mix cornflour with a little water and add to the soup.
  4. Serve with crusty bread.
