Hearty Pumpkin & Lentil Soup

A delicious dish for the whole family. It can be your comforting aid on those off days, and a yummy treat (minus the chilli) for your little ones when you need to whip up something quick. It freezes great too!


  • 1 large clove garlic
  • 1/2 onion
  • 1 medium chilli, seeds removed (optional)
  • 1 tsp fresh ginger, grated or finely chopped
  • Few stalks celery
  • 1/2 medium sized pumpkin
  • 1 red kumera
  • 1 large potato
  • 2 large carrots
  • 1/2 cup red lentils
  • 2 tsp curry powder
  • 2 cubes vegetable stock
  • paprika
  • turmeric
  • cumin
  • water
  • 1 can coconut cream


  1. Saute garlic, onion, celery, chilli and ginger in olive oil until softened, approx. 3 minutes.
  2. Add remaining vegetables in large chunks, lentils and cover with water.
  3. Add vegetable stock and seasonings to taste.
  4. Leave to simmer until veges and lentils are soft – don’t worry cannot overcook!
  5. Blend soup with coconut cream and add salt and pepper to taste.
