Cheesy Zucchini and Mushroom Slice
Almost any vegetable can be used in this slice just make sure it is finely chopped or grated to please little mouths! This slice can be served warm or packed up in a picnic basket for a picninc lunch!
- 3 large zucchini (grated)
- 1 cup mushrooms (grated or chopped)
- 1 medium onion (finely chopped)
- 1 cup light tasty cheese (grated)
- 3/4 cup self raising flour
- 1/3 cup vegetable oil
- 4 eggs (lightly beaten)
- Salt and pepper for seasoning
tep 1: Preheat oven to 180 degrees. Line a 19cm x 29 cm slice tin with non stick baking paper.
Step 2: Squeeze grated zucchini to get rid of excess liquid.
TIP – I grate and chop everything in a blender – it makes things quick and easy and my 1 month old likes pressing the buttons!
Step 3: In a large bowl combine the zucchini with the mushroom, onion, cheese, sifted flour.
Step 4: Mix the oil with the beaten eggs and add this mixture to the other ingredients.
Step 5: Pour into prepared tin and bake for 40 – 45 mins or until firm to touch and golden on top
