These mini sponges are a delight for children and adults of all ages. They have the appeal of cakes, but are packed with fruit!

Ingredients
- 3 apples or fruit puree
- 50 gm butter
- 50 gm caster sugar
- 50 gm flour
- 1 egg
- 1 tsp baking powder
- 1 tsp vanilla essence
Instructions
- Preheat oven to 180 degrees
- Grease muffin tray
- Peel and chop apples and stew in pot with a splash of water until soft
- Puree stewed apples
- In another bowl cream together butter and sugar, add remaining ingredients and beat together
- Put a tablespoon of hot fruit* into muffin tray and dob a teaspoon of sponge on top (NOTE, *Fruit must be hot)
- Cook for 10 mins or until sponge golden brown
