Great healthy pasta for the kids, add cheese on top and bake for something extra special!

Vegetable Pasta


  • 1 capsicum
  • 1/2 onion (optional)
  • 4-5 mushrooms
  • 1/2 a 410g tin of corn kernels
  • 1 400g tin of chopped tomatoes
  • Cooked pasta (I like to use risoni as it is small and easy to eat)


  1. Cook capsicum and onion in 1T of olive oil for 4 minutes.
  2. Add mushrooms and corn.
  3. Cook for 4 more minutes.
  4. Add tomatoes and cook for 15 minutes.
  5. Blend then add cooked pasta.
