When my 13 month old is being fuusy I always give her my 'mini eggy pies' (for want of a better name!!). I keep them frozen in the freezer and she usually eats atleast 2 at a meal, which is good as usually isnt too keen on egg.
1 onion finely chopped
handful of bacon finely chopped
1 or 2 cups of cooked brown rice
1 carrot grated
1 zucchini grated
1 capsicum finely chopped
1/2 cup sundried tomatoes chopped
cup of milk
cup of grated cheese...
fry onion and bacon until cooked,
whisk eggs with milk and cheese
mix together onion/bacon, rice and veg.
Divide mixture amongst muffin baking tin,
pour over egg mixture.
Bake in oven until cooked and brown
So yummy you will have to refrain from eating the ones you intend to freeze... or not refrain and simply polish them off like I sometimes do!!!
