Bacon & Tomato Pasta

A quick and easy recipe to make which also freezes well. My cherub can be a fussy wee thing at times but this appears to be foolproof!

Bacon
1 onion
1 large can Tomato Soup (I tend to use Wattie's Very Special as it's not too strong for the littlie)
Masterfoods Italian Herbs (optional)
Fresh / Frozen Vegetables (optional)
2-3 cups Cooked pasta (shells, macaroni, spirals)
Grated Cheese - Mild or Tasty

Cut bacon into pieces and dice onion.

Cook pasta as per packet directions.

Heat a little oil, add bacon and onion. Cook until bacon is how you like. Add tin of tomato soup and also herbs (optional) and allow to simmer for 5-10 minutes.

Drain pasta when cooked and add to bacon and tomato mixture. Add cheese and allow to melt.

Serve with fresh hot/cold rolls.

I also add either fresh / frozen veges to this pasta at the adding of the soup stage when serving for my daughter.

Any leftovers can be frozen.

Yummy Asparagus & Vegie Frittata

Serves: 6 (approx)

Ingredients:
4 - 5 eggs (depending if large or small)
1 packet Spring Vegetable Soup Mix
1 1/2 cups reduced fat milk
2 tablespoons plain flour
1 cup grated reduced fat cheese
1/4 cup sliced spring onions, green onions or shallots
1 cup of mixed chopped vegies (small cuts or use a cup of frozen mixed vegies)
1 x 340g can asparagus spears, drained


Preparation
step 1: Place eggs, Spring Vegetable Soup Mix, milk and flour into a bowl and whisk until blended. Stir in cheese and spring onions & vegies.

step 2: Pour egg mixture into a greased 25cm ceramic flan dish. Arrange asparagus spears on top.

step 3: Bake at 180°C for 40-45 minutes, until set and lightly browned.

Serve with salad. ENJOY
Tomato Soup chicken

1tblsp oil (olive)
1 Spanish Onion (chopped)
2 Cloves of garlic (chopped or sliced)
1/2 cup chopped button mushrooms
2 spring onions (sliced)
1/4 cup chopped fresh basil
2 chicken breast fillets (sliced into strips)
1 Can of Tomato Soup
1/2 Cup Cream
1/2 cup chicken stock
2 cups cooked curly noodles (spiral)

preparation

heat oil in pan & lightly saute onion, garlic & spring onions, add chicken & brown till 1/2 cooked. Add Tomato soup & simmer for 10mins. Add cream, chicken stock, mushrooms and basil. stir through & cook until liquid thickens up (should only be about 5-8 mins more). Serve on noodles in a bowl (or you can mix noodles in pan when cooking, whatever really). Serve with toasted garlic bread... YUMMO... even both kids loved this one!!!
My 8.5mth daughter is a very fussy eater, still being breast feed. She loves her fruit and cereal but it gets a bit boring.

I decided to spice up her usual with weetbix. I can not express enough milk for weetbix so I add fruit and hot water to them, she LOVES it.

FRUITY WEETBIX

Stewed fruit (apples and pears work great)
1 weetbix
A little boiled hot water

Place the weetbix in a bowl
Add hotwater to soften
Mix in the stewed fruit (my daughter likes about 3 ice cubes of fruit, your child may like more or less fruit).
If it is a little thick, add a bit more water for your desired consistency.

Wahlah Fruity Weetbix, eaten as quickly as it was made.

It is such a great easy receipe that all will love.

Oats With Fruit

1/4 Oats
1/4 Water
1/4 Milk
2 Tablespoons of fruit that your baby loves (ie apple/pear etc)

Put oats, water and milk in a microwave proof container, heat for 1 minute and stir then heat for a further 1 minute and stir. Add fruit and mix. To get texture smooth you will need to blend. Add further milk or water if too hot.

A quick and hearty breakfast!

Easy tip, if you need to blend, blend up oats before you cook!
This is my first attempt at a Forum so what better way to introduce myself than with a quick recipe.

To make a speedy Chinese Vegetable Noodle Soup for winter:

Chop whatever vegetables you have in the fridge in even sized pieces, carrots, leeks, onions, zucchini, broccoli, cauliflower and Asian Vegetables of any description are perfect.

Add to a large saucepan, cover with boiling water and start to simmer until still a little crispy. Add chicken stock powder to taste and small amount of salt, a tablespoon of Soy Sauce and a big dollop of Oyster Sauce to add taste.

I always add a pack of Rice Noodles at the last minute - the fresh ones in the fridge section of the supermarket are nicer or dried noodles are fine.

Simmer for another 5 minutes and the dish is ready. There is nothing nicer than the whole family slurping the noodles together.

Hi Everyone

I am always looking for healthy and nutritious snacks that are low in sugar for my two girls. My mother-in-law passed this recipe on to me that is just so delicious and good for you and my girls love it as much as I do.

FRUIT LOAF

Ingredients
3 cups S/R flour
2 tbsp raw sugar
2 tbsp milo
1 tsp baking powder
2 1/2 cups milk
pinch of salt
375g of dried fruit (I use sultanas and apricots)
2 tbsp golden syrup
1 tsp ground ginger
Chopped walnuts to taste

Method
1. Soak fruit in one cup of the milk overnight in the fridge. Note - soaking for a couple of hours is ok too if you are in a hurry.
2. Mix all ingredients together.
3. Bake in a moderate oven in two loaf tins until skewer comes out clean.
4. Slice pieces and spread a little butter on top if desired. It is great on its own too.

4 lovely munchkins DD 10/03, DD 03/05, DS 10/06 &

Cheesey Vegemite Scrolls.

3 cups S.R. flour
1 - 2 tbsp Vegemite
Pinch Salt
50g butter
200g grated cheese
375 ml milk

Pre-heat oven to 220
Sift flour and salt into a bowl
Rub in the butter until the mixture looks like fine bread-crumbs
Stir in enough milk to make a soft dough
Knead on a lightly floured board
Roll to form a rectangle that is roughly 40cm x 25cm
Spread vegemite over the dough using a blunt knife
Sprinkly 3/4 of hte cheese over the top
Roll up the dough starting from a long side first
cut 10 4cm pieces from the roll
Place these pieces close together, cut side up on a greased baking tray
Sprinkle the rest of the cheese over the top
Bake in the oven for 15-20 min.
Mincey Pasta Bake

A favourite with the whole family!!!


500gm mince (what ever meat is your favourite).
1 tspn crushed garlic
1/2 chopped capsicum
1 chopped carrot
1/2 chopped zucchini
1/4 cabbage, sliced
2 tbsn tomato paste
400gm can diced tomatoes
1/2 cup water
fresh basil, chopped
150gm dry pasta
120gm grated cheese


Method:
Fry garlic in hot pan, then add mince. Cook until browned all over. Add vegetables to the pan and cook for 5 minutes or until semi-soft.
Add tomato paste, tinned tomatoes, water and basil to the pan and stir well. Bring to the boil then simmer for approx 20 minutes or until vegetables are soft.
Cook pasta as per packet directions then drain well.
Add pasta to the mince mixture and combine well. Put everything into a casserole dish and sprinkle with the grated cheese.
Cook in a momderate oven for 10 minutes or until cheese is melted and golden on top.

Thisis great for the whole family. I blend it for my 8 month old daughter and my husband and I love it as it is.

YOu can subsitute any vegetables that are your favourite.

This is also great to make early in teh day then throw into the oven just before dinenr time.

This is an easy receipe you can make with your toddler for a special treat.

- Choc Chip Cookies -

2/3 cup + 1Tbs plain flour
1/4 teaspoon baking soda
pinch salt
1/4 melted butter
1/4 packed brown sugar
3 Tbs caster sugar
1 egg
1/2 teaspoon of vanilla extract or 1 teaspoon vanilla essence
1 Tbs water
1/3 cup of choc chips (or sultanas are yummy instead)

mix all ingridents (except choc or sultanas) in a bowl until well combined. stir in Chocchips.

drop teaspoon sized mounds onto lined baking tray. Do not flatten and leave lots of room for spreading I fit about 6 to a sheet.

Bake 10-12 mins in a preheated 180 degree oven until nicely browned.

Remove from oven and allow to cool on tray. (if you can wait that long)

Makes about 12

Curried Tuna Casserole

1 large tin tuna, drained & flaked
3-4 cups cooked rice
3 tablespoons margarine
1 dessert spoon curry powder (mild)
1 pkt chicken noodle soup
1 cup milk
1 cup water
2 tablespoons plain flour
lemon Juice
shredded chesse
Parsley

1) Melt margarine, add curry powder and flour and cook for 2 mins, then add milk, water and soup mix.
2) Stir until thickened.
3) Add tuna and 1 tablespoon lemon juice and chopped parsley.
4) Grease a casserole dish and put in 1/2 the rice, then 1/2 the tuna mixture and repeat layers.
5) Top with crushed cornflakes or shredded tasty cheese.
6) Bake in a moderate oven until heated through.

This makes quite a lot but can be frozen and reheated.
My 3 children absolutely love it.
