1/4cup plain flour, 1/4 cup self raising flour, 1/2 cup dessicated coconut, 1/4 cup soft brown sugar, 50gms butter. FILLING: 60gms butter, 4tbs golden syrup, 2x 400g cans condensed milk TOPPING: 125gms dark chocolate, chopped 30gms butter
Preheat oven to 180 c Line base and sides of shallow 28x18cm tin with aluminium foil
Sift flours, add coconut, and make a well in centre, combine sugar and butter in small pan and stir until melted and sugar has dissolved.
Add butter to flours and stir till combined, press over base of prepared tin using back of fork. bake for 10 mins leave to cool
Filling: combine butter, syrup and condensed milk in pan stir constantly low heat for 10 mins until boils and lightly browns. pour over base and bake for 20mins. cool completely
Topping: combine choc and butter in bowl over simmering water until melted spread over caramel filling and leave to set! Enjoy
