Wheat free recipes!! Lock Rss

Hello here are a few wheat free recipes I have found whilst surfing. If anyone has others it would be great if you could post them as well.

These are from the Coeliac Society of Victoria



125gms Margarine
2 cups of Gluten Free Cornflake or Puffed Rice(rice bubbles) or Rolled Flakes
3/4 cup of Coconut
1 1/2 Tsp of Bicarbonate of Soda
1Tbs Golden Syrup
1 cup of sugar
2 tbs water
1 cup of Gluten Free Flour (ie rice - potato etc)


Mix cornflakes (or substitute) with sugar, coconut and gluten free flour in a large bowl. Melt margarine and golden syrup together. Add bicarbonate of soda to boiling water and dissolve. Add this to margaine and syrup mixture (use a big pan so that it doesnt froth over the top). Pour into the bowl with the dry ingredients and mix until combined. Roll teaspoons of mixture into balls and flatter slightly. Place on greased baking tray, well spaced to allow for spreading during baking. Bake at 150cc/300f for 20 minutes or until golden brown. Allow to cool slightly on baking trays before lifting on to cooling racks.

If wheat free is not an issue for you then recipe will work equally as well with the equivalent quantities of either a combination of plain and wholemeal flour or plain flour alone.

Preparation time including baking 30 minutes.
Serves 24 - 30 biscuits depending on size.


Gluten Free Muesli Bars

350 gms of Gluten Free Muesli ( eg Abundant Earth)
200gms chopped dates
1 teaspoon mixed spice
1/2 cup of golden syrup
3/4 cup of gluten free plain flour
2 eggs


Mix dry ingredients together in a bowl. Add eggs and golden syrup, mix thoroughly until all ingredients are combined and sticky. Press into a lightly greased lasagna size tray until aproximately 2 cm thick. Bake in a moderate oven(180c) for approximately 30 minutes or until golden. When cooler, cut into desired size.

Keeps best in an airtight container in the fridge.
Preparatoin Time: 35 Minutes including baking time.
Serves: Approx 12, depending on bar size.


Scrumptious Chicken Loaf
This delicious and easy to make loaf will keep them coming back for more. Popular with the kids, yet good enough to serve guests at a special meal.

2 Large Onions, finely chopped
1 TBL extra light olive oil
1 KG chicken mince (a ratio of approx 65% dark meat to 35% white meat)
3 large carrots, peeled and grated
1 cup finely chopped fresh flat-leafed parsley
1 to 2 cloves of garlic, minced
1 large egg and 1 egg white, beaten together
A few drops of Sesame oil (optional)
Sea Salt
Ground white pepper.


Preheat oven to 200c (375f). Saute chopped onions in oil until translucent. Set aside to cool. Place Chicken mince in a large mixing bowl. Add cooled sauteed onions, granted carrot , chopped parsley, minced garlic and egg mixture to the chicken. Mix well. Season chicken mince with 2 or 3 drops of Sesame oil, sea salt and white pepper. With wet hands, place mixture into a greased baking dish and form into a loaf. Bake for 1 hour.

Its important to always have a higher ratio of dark to white meat chicken in the mince so that the loaf remains moist. Be thorough when mixing the mince mixture together so that the two minces along with other ingredients are fully dispersed throughout the loaf. Leeks, the while and light green parts only, may be substitued for one or all of the onions. Sesame oil is a strong flavour, use sparingly.

Serving suggestions: Serve with baked ptotoes and a steamed green vegetable.

Preparation time: Not including baking - 20 minutes.
Serves: 6 - 8


Meat Loaf

This recipe is easy to prepare, delicious and a great hit with children. Leftovers are a favourite served in the lunch box the next day. THIS IS A GREAT WAY OF CONCEALING VEGETABLES!!!!!

1KG of Minced Beef
1 large onion, finely grated
2 Apples,peeled and coarsely grated
2 Carrots, peeled and coarsely grated
dash of Tomato Sauce
dash of Tamari Soy Sauce
dash of Freshly Ground Pepper

Combine and mix well all of the above ingredients. Place in a baking dish and pour more tomato sauce over the top. Bake in moderate over for approx 45 mins to an hour.

Serve hot with mashed potatoes and a green vegetable or served cold in sandwiches or sliced in to finger food sizes.
Preparation time: Not including baking - 15 mins.
Serves: 5

Thanx for posting those recipes, my son is on a dairy, wheat, gluten and soy free diet so with a lil altering of some recipies, i think he'll love em!!!!!!
