Breakfast ideas Lock Rss

We are having family here on Sunday morning and we are doing Easter breakfast. What are some different ideas for it?

We were thinking bacon and eggs on the BBQ - but making them into muffins. I'm also doing alphabet piklets with the 3 year old (dd1 and her cousin).

What are some yummy variations on bacon and eggs?
We always have a yummy fruit platter as well as bacon and eggs. Hot cross buns? Danishes?
We do scrambled eggs with smoked salmon on the BBQ. Also cut a circle out of the middle of the bread, put the egg in and cook. Also put the circle cut out on BBQ too. Can't think of anything else funky on the BBQ at present...
Ricotta, chive & proscuitto omelettes
2 eggs (seperated)
1 tbs cream
70g ricotta, crumbled
1tbs chives, chopped
1/4 cup sour cream
50g baby spinach
100g proscuitto

Whisk whites till foamy/peaky, set aside.
Combine yolks, cream, ricotta, chives, s&p.
Gently fold in egg whites.
Cook portions of mixture approx 3 min each side or till golden.
Top with spinach, proscuitto & sour cream.

(This is a recipe serving for 2 but you could increase the mix and make them small like the size of blinis. I like them with smoked salmon instead of proscuitto.)

Or you can do a 'big breakfast' bacon, eggs, sausages, baked beans, hash browns, grilled tomato, halved button mushrooms sauteed with butter, garlic n parsley.

Fruit salad with yoghurt and toasted muesli.

Apple & cinnamon pancakes are great on the bbq too.
