Put vegetables in your lasagna?

I ask because I always do and DH has said vegetables don't belong in lasagna.

Yep i do all the time, eggplant, sweet potato, zucchini and pumpkin, sometime some capsicum depending. yum yum
Not usually. I think the last one might have had tiny chopped carrots an that was good but I don't normally smile

Yes, I tend to add veges to just about everything. Something like a lasagne I would chop them finely or grate them so I didn't mess with the texture too much. Usually I add zucchini, carrot, onion, capsicum, mushrooms and a tin of diced tomatoes.

Always. My usuals are carrot, zucchini, mushrooms and spinach. I put them all in the food processor then add to the mince. Indonthecsane with spaghetti and tacos smile

Food processor, great idea LM. Would save you lots of time I imagine?

Definitely!! Bulks it up, makes it a little nutritious and adds tons of flavour!! Yum! It's one of our households favourites, hubby makes the best one. If we don't feel like vege overload, we grate a few of them in so the kids are still getting the goodness without knowing! smile

I don't but I do sometimes put them in spag bol- I grate zucchini and carrot and put cannellini beans in as well. A friend made me spag bol once and it had olives in it. Was YUMMMMMMM.

Also great in spag bol is baby spinach. Add the leaves at the very end. They don't really have a flavour but adds nutrition and looks really vibrant

Yep I do every time grated carrot and zucchini and diced capsicum.
Okay I'm glad I'm not alone. I tend to put vegetables in most things. I made lasagna tonight and put peas, corn & carrots in it (shopping week this week so it was all I had) and DH made a massive fuss about how I've wrecked it.

I'd argue that it's not about wrecking it, it's about making it healthier and setting good examples for your little one.

Is it just me, or does it seem like a lot of men never grew out of the childhood not wanting to eat veges stage? I always seem to hear of men who complain about the green content of meals yet will happily chow down anything with cheese and meat in it

Absolutely. Nothing fancy, just grate carrot and zucchini and chuck in some mushrooms. At least that way I know DD will get some vegies without the world coming to an end! smile
